The Chef should be an experienced, forward-thinking Chef who is passionate about culinary arts. The ideal candidate for this position will be a natural who always has a finger on the pulse of current culinary trends. The Chef will be responsible for, preparing meals for our patients, families, guests and staff to come up with delectable new dishes to add to our growing menu. Key Responsibilities include:
Prepare highest quality fresh, tasty and nutritious food.Lunch and dinner daily.Chef must prepare adequate food for Patients and staff on duty (currently approximately 35 people per meal) and have a minimum of waste or excess food.
Experience and understanding of cooking organic and natural food
Possess sufficient knife skills and technical ability
Use no processed sugars in Canyon prepared foods, be knowledgeable in the use of alternative sweeteners in cooking, baking and desserts.
Meet with patients and note any food allergies and dietary restrictions and preferences (in absence of Exec. Chef).
Prepare individual dishes for patients with specific diets or food allergies - i.e. gluten free, vegan, etc.
For clients with eating disorders, prepare plates with weighed portions to help them regulate food intake.
Make up daily menus one week in advance for the Chef to review.
Prepare meals for visitors and guests as requested.
Assist the Exec. Chef with inventory and ordering
Fill grocery lists for Casa Angeles when working designated shift (currently Tues., Thurs., and Sat.)
Chefs are to help with clean-up of dishes and maintain tidy work stations and storage areas
Maintain clean and organized refrigerators daily. Rotate stock in refrigerators, throw out leftovers after 3 days.
